Mezze Style Hemp Oil Buddha Bowl - Saint Hemp

Ingredients (serves 1)

  • Hemp oil tzatziki dressing, including:
    • 3 tbsp of plain coconut yoghurt
    • 1 tbsp of Saint Hemp hemp seed oil
    • 3 tbsp of fresh parsley, finely chopped
    • The juice of 1/2 lemon
    • A generous pinch of salt and pepper
  • Quinoa tabbouleh, including:
    • 1/2 cup of quinoa
    • 1/2 a cucumber - cut into small cubes
    • 6 cherry tomatoes - quartered
    • The juice of 1/2 lemon
    • A small bunch of parsley - finely chopped
    • 2 tbsp of red onion - finely chopped
    • 1 tbsp of Saint Hemp hemp seed oil
    • Pinch of salt
  • Remainder of Buddha bowl, including:
    • 4-5 falafels of your choice
    • A generous handful of mixed greens - rocket, lettuce or baby kale
    • 1 carrot - peeled and cut into ribbons
    • Few radishes (optional) cut into halves
    • A small handful of olives

Method

  1. To make the dressing simply add all the ingredients into a small bowl and mix until well combined
  2. To make the quinoa tabbouleh, mix all the ingredients into a bowl (this can be made the day before)
  3. Assemble your bowl by placing the greens at the bottom, then add your quinoa tabbouleh, falafels, carrot ribbons and chopped radishes (if using).
  4. Drizzle some tzatziki and enjoy!
